5. Then stir in cooked quinoa and add salt & pepper to taste. 6. Spoon this mixture evenly into casserole pan. Then top with crumbled feta cheese. 7. Just use what you have in the kitchen and make a nice presentation….makes the kids excited to pick out their favourite things…and to try new ones!

Remove kale leaves from the stems and place in a medium bowl. Drizzle with olive oil and a pinch of salt and pepper. Massage slightly to combine oil and spices. Shredded leftover rotisserie chicken goes in (use any cooked meat you have on hand, or leave it meatless.) Then some Mediterranean flavor makers like olives, a sprinkle of feta, and fresh parsley. You can use any vegetables you have on hand. And if you decide to use harder vegetables like carrots or broccoli, saute or cook them first and let them cool before using.

And the hubster will tell you I’m pretty bad about that…especially when I’m in the middle of testing out a new recipe and BOOM I’m off to the store cause I forgot that one ingredient. Lucky for me though, I have some supermarkets close by where I can usually find what I need.
